20 MINUTE GARLIC BEEF AND BROCCOLI LO MEIN

20 Minute Garlic Beef and Broccoli Lo Mein has melt in your mouth tender beef with broccoli, carrots, and noodles. The sauce adds such amazing flavor to this incredibly easy meal!

Ingredients

• 8 ounces lo mein noodles or spaghetti noodles
• 3 cups broccoli florets
• 1 Tablespoon olive oil
• 8 ounce flank steak sliced against the grain
• 3 garlic cloves minced
• 1 medium carrot shredded
• ¼ cup packed brown sugar
• ¼ cup reduced-sodium soy sauce
• 2 Tablespoons hoisen sauce
• 2 teaspoons sesame oil
• ¼ teaspoon ground ginger
• ¼ teaspoon crushed red pepper flakes
• ¼ teaspoon pepper

Instructions

• In a [url:1]large pot[/url] with boiling water, cook the noodles according to package directions. Add the broccoli the last 5 minutes of cooking and let them cook until tender. Drain the noodles and broccoli.
• While the pasta is cooking, add olive oil to a [url:2]medium sized skillet[/url]. Cook the steak until no longer pink. Add the garlic, and carrots and cook for a minute more.
• In a [url:3]small bowl[/url] whisk together the brown sugar soy sauce, hoisin sauce, sesame oil, ginger, red pepper and pepper.
• Add the spaghetti to the skillet and pour the sauce on top and toss until incorporated.

Air Fryer Twice Baked Potatoes

Ingredients

• 2 cooked baked potatoes
• 2 Tablespoon sour cream
• 1/2 cup cheddar cheese
• 1 Tablespoon butter
• 2 slices bacon, cooked

Instructions

• Cut the baked potatoes in half and scoop out the insides into a bowl.
• Add the sour cream, 1/4 cup of cheddar cheese and the butter to the bowl with the potatoes.
• Mash the potatoes and other ingredients together with a potato masher until they have reached your desired consistency.
• Spoon the filling back into the potato shells, mounding it to fit as necessary.
• Refrigerate until ready to serve.
• When you are ready to bake the potatoes put them in an air fryer basket. Cook at 400 F for 8 minutes.
• Top the potatoes with the remaining 1/4 cup of cheddar cheese and bacon bits. Be careful not to touch the hot sides of the air fryer basket while you do this.
• Return the potatoes to the air fryer and cook for 2 more minutes at 400 F to melt the cheese and crisp the bacon.

Notes

To cook the potatoes in the oven bake at 350 F for 20 minutes. Then top with remaining cheese and bacon and cook for 5 more minutes.

BEST EVER GROUND BEEF TACOS

Ingredients

• 1 pound lean ground beef
• Taco Seasoning
• 2 Tablespoons tomato paste
• 1/2 cup water
• 6-8 taco shells

Optional Toppings:

• Shredded Cheese
• Lettuce
• Tomatoes
• Olives
• Avocado diced

Instructions

• In a medium sized skillet over medium high heat add the ground beef and cook and crumble until brown. Add ingredients for homemade taco seasoning, tomato paste and water. Stir until combined. Let it simmer until it starts to thicken, about 5 minutes.
• Divide evenly into taco shells and top with desired toppings
