Healthy Breakfast Strawberry Oatmeal Bars

Healthy Breakfast Strawberry Oatmeal Bars are delicious, moist and easy breakfast that your family will love! This recipe is just awesome and super healthy! The best way to start your day – Healthy Breakfast Strawberry Oatmeal Bars!

INGREDIENTS

  • 1 cup rolled oats
  • ¾ cup all-purpose flour
  • ½ cup light brown sugar
  • Pinch of salt
  • ½ teaspoon ground ginger
  • 8 tablespoon unsalted butter, melted
  • 1 teaspoon cornstarch
  • 2 cup strawberries, small-diced
  • 2 tablespoon lemon juice
  • 1 tablespoon granulated sugar, for sprinkle

INSTRUCTIONS

  1. Preheat oven to 375 degrees. Line an 8×8 inch baking pan with parchment paper
  2. In a large mixing bowl, mix together the oats, all-purpose flour, light brown sugar, ginger and salt
  3. Pour into the melted butter and mix until all of the oats are moistened and the mixture is thoroughly combined
  4. Reserve ½ cup of the oat mixture
  5. Press the remaining oat mixture into prepared baking pan
  6. Spread the strawberry on top of the oat mixture, then sprinkle the cornstarch evenly over the top, sprinkle lemon juice and granulated sugar
  7. Reserved ½ cup oat mixture, crumble this over the strawberry on top
  8. Bake for 25-30 minutes, until the crumbs looks golden
  9. Allow to cool completely before cutting into bars
  10. Makes 9-12 bars, depending how large you cut them

Banana Bread Cookies (gluten free, vegan)

These easy vegan and paleo banana bread cookies are a delicious and healthy treat the whole family will enjoy. Their banana bread flavor is to die for!

INGREDIENTS

  • 1 1/2 cups almond flour
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon sea salt
  • 1/4 teaspoon cinnamon
  • 1 tablespoon pure maple syrup
  • 1 1/4 cup overly ripe mashed bananas (about 4 medium bananas)

Optional Add-ins

  • 1 egg
  • 1/2 cup chocolate chips
  • 2 tablespoons nut butter
  • chopped nuts
  • 1/2 teaspoon vanilla extract
  • extra 1/4 teaspoon cinnamon
  • pinch ground cloves

INSTRUCTIONS

  • Preheat the oven to 350℉ and line a baking sheet with parchment paper
  • Add the almond flour, baking soda, salt, and cinnamon to a bowl and mix well
  • Mash the bananas with a fork and add them to the dry ingredients (I mash, then measure)
  • Add the maple syrup
  • Mix until all the ingredients are evenly incorporated
  • Use a 1.5 tablespoon cookie scoop to scoop the dough onto the baking sheet
  • Gently flatten the cookies with a fork or back of a spoon.
  • Bake for 26-30 minutes until the middles have set and aren’t wet (mine were perfect at 28 minutes)
  • After the cookies come out of the oven, place them on a wire rack to cool
  • Let the cookies come to room temperature before eating
  • Store in an air tight container in the fridge for up to 5 days
